Second Assistant
The Second Assistant's primary responsibility is to run shifts. He/she is expected to master all aspects of Floor Control in order to achieve a consistently high level of floor operation. In addition, the Second Assistant begins to expand responsibilities toward motivation and direction of people, general morale, the ability to maintain restaurant equipment and to maintain a high level of Q.S.C.
The Second Assistant is responsible for:
- All responsibilities of the Manager Trainee.
- Meeting Q.S.C. standards on all shifts without supervision.
- Interviewing and selecting crew people and conducting crew orientations.
- Training crew trainers and helping to train Manager Trainees and Swing Managers.
- Recording documentation in employee personnel files.
- Giving input on crew performance reviews.
- Completing weekly inventories and statistical (or variance) reports.
- Logging and preparing invoices for payment.
- Maintaining restaurant safety awareness and safety records.
- Using proper security and verification procedures when handling deposits and safe contents.
- Executing crew incentives and enthusiasm calendar activities and maintaining the crew bulletin board.
- Adjusting bin levels and charts.
- Collecting information and initiating insurance claims when incidents occur on the shift.
- Calculating the restaurant's Build-To's and ordering food, paper and operating supplies.
- Helping to budget and control assigned P&L line items.
- Completing assigned daily, weekly and monthly equipment calibrations.
Criteria for Promotion to First Assistant:
- Proficiency in all requirements of the Second Assistant position.
- Ability to communicate with and lead the crew in the successful operation of shifts.
- Ability to assist the Store Manager and First Assistant in many of their duties.
- Ability to motivate self and others.
- Advanced Shift Management Class with Action Plan completed.
- Food Safety Course.
- Effective Management Practice (EMP) Class with Action Plan completed.
